Somehow I managed to reply to myself posting again..

You could possibly use Siri/Voice Control to select "trust this computer".

How much time do you get after the restart? Would it be enough to go to Settings > General > Date & Time, set your date manually to a date a month ago.
I know it sounds kinda silly but it worked for some phones.. Then, backup and restore through iTunes.

Your suggestion of having Siri tell the phone to trust-this-computer after I hit update in iTunes worked...I'm able to get into the phone now and I'm backing up stuff to the computer that I'll transfer to the new replacement phone the insurance company sent me. A new iPhone 7...same as the one that developed the problem. I had to put in a claim and they overnight'ed me a phone because this a a busy time of year for me and the only way for clients to reach me is through phone calls and text messages. I conduct my life through my phone...so it seems. Something wrong with that to me in an old school sort of way. To be so dependent on technology to the point that it dictates our lives is one to be debated for ages. But bottom line, technology is here now and nothing will stop it.
And the bright side of that is that you make a living because of it...and that can't be a bad thing

That might be the beginning of "old timer's disease"
That's a great idea about the Siri voice control thing. Worth a try.
After the force restart? The time is literally seconds...maybe 3 seconds tops. It doesn't even get to the second screen where the Settings control/app is, as well as all the other apps.
